 The Koszarek Smoke Discipline is a structured approach to barbecue that focuses on three core principles: fire control, process consistency, and flavor execution.

  •  Kevin Koszarek is a barbecue-focused culinary professional, current culinary student, and military veteran with a passion for building structured, high-quality barbecue systems.

His approach is rooted in Texas-style fundamentals but shaped by global experience and a disciplined mindset developed through military service. Instead of relying on feel alone, Kevin emphasizes control, repeatability, and execution—ensuring that results can be reproduced consistently, not just achieved once.

Through the development of the Koszarek Smoke Discipline, he has created a system that bridges the gap between traditional barbecue craft and real-world operational performance.techniques from around the world.

 Kevin’s background combines hands-on barbecue experience with structured learning and real-world application.

Southern style sides like smoked beans, pork belly collard greens and of course, creamy macaroni and cheese.

Our Trailer Goal

This is the type of barbecue trailer we are planning to use. A 28' trailer with a 10' porch. Using a combination of wood burning smokers and pellet smokers to create the perfect barbecue. A premier trailer with an efficient layout to make vending as easy as possible.

 Bombed Out BBQ continues to grow through catering, consulting, and brand development, with long-term plans that may include a smaller-scale mobile operation.

Private chef services are still available on a limited basis, but the primary focus moving forward is the continued development and application of the Koszarek Smoke Discipline.
